Apple Jicama Salad

Apples grow on trees and are among the world’s most popular fruits. Apples are high in fiber, vitamin C, and various antioxidants. They are also very filling, considering their low-calorie count. Studies have shown that eating apples can have multiple benefits for your health! Check out our apple recipes for some healthy and yummy springtime meals!

Ingredients


Salad

  • ¼ cup pepitas (pumpkin seeds), roasted (optional)/alternative: sunflower seedsÌýshelledÌý
  • 4 cups peeled and diced jicama (approximately 1 large jicama)Ìý
  • 1 medium apple,ÌýdicedÌý
  • 1 cup gratedÌýcarrotsÌý
  • 2 tablespoons chopped greenÌýonionsÌý
  • ½ cup grated redÌýcabbageÌý
  • 2 cups finely chopped kaleÌý
  • 1 tablespoon finely chopped cilantroÌý


Dressing

  • 4Ìýtablespoons olive oilÌý
  • 2 tablespoons apple cider vinegarÌý
  • 2 teaspoons Dijon mustardÌý
  • 2 small cloves garlic, minced (or ½ teaspoon garlic powder)Ìý
  • ½ teaspoon saltÌý
  • ¼ teaspoon pepperÌý
  • Optional: 2 tablespoons of honey (or to your liking)Ìý

Directions

  1. In a small frying pan, roast pepitas over medium heat, stirring constantly until browned.Ìý Remove from pan and allow to cool.ÌýÌý
  2. In a large bowl, mix all vegetables and pepitas.Ìý
  3. In a small bowl or jar with lid, mix all ingredients together.Ìý
  4. Add dressing to vegetable mixture and stir to distribute dressing evenly over vegetables.Ìý
  5. Cover and chill for 30 minutes prior to serving.
